Stuffed Zucchini Recipe

  • 4 lbs big ripe zucchini
  • 1 lb minced beef
  • 2-3 medium sweet onions
  • 2/3 cup rice
  • 7 tbs butter
  • 1 small bunch parsley
  • 1 egg yolk
  • 3 tbs flour
  • 1 lemon
  • 2 tsp salt
  • 1 tsp pepper

Stuffed zucchini, which is called in Greek “kolokithakia gemista”, is a delicious traditional recipe of small zucchini stuffed with mince and rice, and covered with avgolemono, an egg-lemon sauce.

Greek Stuffed Zucchini Recipe Directions:

  • Cut the ends of the zucchini off
  • With a decorer take out all flesh
  • Place zucchini shells in a bowl of water and after 5 min strain them
  • Put meat in a bowl with finely chopped onions and parsley and mix
  • Add rice, salt and pepper and mix
  • If mixture is too firm add a tbs water or broth
  • Stuff the zucchini with mixture leaving space at the end because the rice once cooked expands
  • Place 3/4 of butter in large saucepan and when melted place zucchini one next to the other
  • Cover with beef broth or water
  • Add salt and place a plate on top of them to hold them down as they cook and cover
  • Let simmer until fully cooked
  • When zucchini are ready, melt rest of butter in a small saucepan -Add flour and whisk -Add broth of zucchini spoon by spoon for a while -Add remainder of broth and simmer until sauce gets very thick
  • Once ready we beat the yolk in a large bowl and add sauce while stirring
  • Add lemon juice to taste
